About the Recipe

Ingredients
1 kilogram lamb
oil
1 onion
1 tomato
4 potatoes
2 chillies
2 cloves
2 cinnamon stick
3 green cardamom pods
1 black cardamom pod
1 teaspoon cumin seeds
1 teaspoon fennel seeds
1 bay leaf
1 star anise
3 sprigs curry leaves
1 teaspoon ginger and garlic
0.5 teaspoon turmeric
1 teaspoon coriander and cumin powder
1 teaspoon garam masala
3 tablespoons chilli powder
2 teaspoon salt, adjust accordingly

Preparation
Heat oil over medium heat.
Add onions and chillies, sauté until translucent.
Add cloves, cinnamon sticks, cardamom pods, cumin seeds, fennel seeds, bay leaf, star anise, curry leaves, ginger and garlic. Mix well.
Add turmeric, coriander and cumin powder, garam masala and chilli powder into the oil. Add little water and stir well.
Add lamb pieces and coat them thoroughly with the spice mixture. Let it simmer, stirring occasionally every 5-7 minutes.
Pour little water, mix well, and let it simmer again. Do this until meat is soft.
Add tomatoes and mix. Allow it to simmer for 5-7 minutes until the oil starts to surface.
Add potatoes, allow to cook until soft.
Garnish with coriander and serve.
